There's a chill in the air and this recipe is one to warm you right up. So packed full of flavor, that my husband devoured his first bowlful and asked for more. The recipe is my creation and can be eaten as a soup or stew, hence the name. I made mine more like a stew. The recipe is the exact measurements I used. If wanting thinner soup like, simply add more water and seasoning. Enjoy!

Ingredients For ~ lentil, rice & bean stewp w/ andouille

  • 6 oz
    spicy andouille sausage, sliced
  • 1 c
    chopped onion
  • 3/4 c
    thin sliced carrots
  • 3/4 c
    thin sliced celery
  • 1- 15 oz
    stewed tomatoes and juice, rough chopped
  • 1 pkg
    uncle bens long grain & wild rice w/ 23 herb and seasoning...add 1/2 of the seasoning packet
  • 1 -15 oz
    drained white beans - great northern is what i used
  • 1 tsp
    each - italian seasoning, chicken bouillon paste
  • 1
    bay leaf
  • 3 clove
    garlic, minced
  • 1/2 c
    lentils, dry
  • 2 1/2 c
    chicken stock
  • 3 1/2 c
    water, more if needed
  • 1 Tbsp
    balsamic vinegar
  • 1/4 c
    dried parsley

How To Make ~ lentil, rice & bean stewp w/ andouille

    Add all ingredients to a dutch oven and bring to a boil. Reduce to simmer and cook for 45 minutes to 1 hour, stirring occasionally and adding more water if needed for desired thickness.
