There's a chill in the air and this recipe is one to warm you right up. So packed full of flavor, that my husband devoured his first bowlful and asked for more. The recipe is my creation and can be eaten as a soup or stew, hence the name. I made mine more like a stew. The recipe is the exact measurements I used. If wanting thinner soup like, simply add more water and seasoning. Enjoy!

Ingredients For ~ lentil, rice & bean stewp w/ andouille

6 ozspicy andouille sausage, sliced

1 cchopped onion
-
3/4 cthin sliced carrots

3/4 cthin sliced celery

1- 15 ozstewed tomatoes and juice, rough chopped
-
1 pkguncle bens long grain & wild rice w/ 23 herb and seasoning...add 1/2 of the seasoning packet

1 -15 ozdrained white beans - great northern is what i used
-
1 tspeach - italian seasoning, chicken bouillon paste

1bay leaf
-
3 clovegarlic, minced
-
1/2 clentils, dry
-
2 1/2 cchicken stock
-
3 1/2 cwater, more if needed

1 Tbspbalsamic vinegar
-
1/4 cdried parsley
How To Make ~ lentil, rice & bean stewp w/ andouille

1Add all ingredients to a dutch oven and bring to a boil. Reduce to simmer and cook for 45 minutes to 1 hour, stirring occasionally and adding more water if needed for desired thickness.
