MY DAD ALWAYS MADE NAVY BEANS AND HAM SOUP, WHICH I LOVE. BUT, THIS COMBINES ALL KINDS OF BEANS, THAT I JUST RELISH. SO EASY. PREP, PUT IN POT, STIR ONCE IN AWHILE. IT COOKS BY ITSELF. HAVE NEVER DONE IN A CROCK POT, BUT I AM SURE WOULD DO NICELY IN ONE, AS WELL.

Ingredients For hearty 15 bean soup

1/2 conions chopped

1/2 ccelery chopped

1 pkgdried 15 bean soup mix
-
2 OR 3ham hocks (smoked are nice)

enough water to fill dutch oven pot to within 2 inches of the top

2 cham cubbed up
How To Make hearty 15 bean soup

1YOU CAN SOAK YOUR BEANS OVER NIGHT, AND THEN WASH AND DRAIN. OR DO WHAT I DO. CHEAT!!! I WASH THE BEANS IN COLLINDER. TAKE OUT THE ONES THAT DON'T LOOK GOOD. DUMP IN A LARGE DUTCH OVEN POT. FILL WATER TO ABOUT 3/4 OF THE WAY. ADD SALT, BRING TO A BOIL. TURN OFF WHEN BOILING AND LET SET FOR ABOUT 15 MIN WITH LID ON. DRAIN IN A COLLANDER AND RINSE. IN THE POT, SAUTEE ONIONS AND CELERY IN SOME BUTTER UNTIL THE ONIONS ARE JUST CLEAR. ADD THE BEANS AND HAM HOCKS, AND FILL TO WITHIN 2 INCHES FROM THE TOP WITH WATER. TURN ON HIGH, TIL BEGINS TO BOIL, THEN TURN DOWN TO LOW FLAME TO SIMMER.SALT, PEPPER, ALITTLE GARLIC, AND ONION POWDER TO TASTE. I LIKE IT WITH LOTS OF PEPPER MYSELF. THEN WALK AWAY,,,CHECK ON IT EVERY ONCE IN AWHILE, AND STIR IT WELL, AS IT WILL REDUCE IN WATER, AND STICK TO THE BOTTOM OF POT. DON'T LET LIQUID DROP BELOW THE HALF WAY POINT OF THE POT.ADD WATER AS NEEDED, TO THE CONSISTENCY YOU LIKE. USUALLY AROUND 2 OR SO HOURS, I CHECK THE HAM HOOCKS. IF THEY ARE FALLING OFF THE BONE, REMOVE THEM, AND ADD THE HAM CHUNKS, AND COOK AN ADDITIONAL 1/2 HOUR. MY DOG GETS THE HAM HOCKS, BUT THERE IS SOME HAM ON THEM, AND YOU CAN CUT OUT FAT, AND PUT INTO THE POT AS WELL IF YOU LIKE.
