elaine's spicy black bean soup
This recipe is a delicious, quick, easy, and economical way to get more protein and vegetables into your diet. I have used Better Than Bouillon paste but you could substitute chicken or vegetable broth to replace the water in the recipe. A garnish of sour cream or yogurt reduces the heat from spices. The Original Rotel is not very spicy. You can make a spicier one if that is to your taste.

Ingredients For elaine's spicy black bean soup

1/2 cchopped onion

1chopped carrot
-
2 tspolive oil

1 canrotel original stewed tomatoes

2 canwater
-
1 Tbspbetter than bouillon chicken paste (or vegetable paste for vegetarians)

1 cdrained black beans

1/2 tspground cumin
-
1/2 tspgarlic powder
-
to tastesalt and pepper
-
1 rounded Tbspsour cream or plain greek yogourt (optional)
How To Make elaine's spicy black bean soup

1Soften onions and carrot in the olive oil.

2Add the Rotel tomatoes and two cans of water and bring to a boil.

3Add remaining ingredients except for black beans and simmer for 10 minutes.

4Add drained black beans and bring back to a simmer. Simmer 10 minutes. Taste for seasoning and add salt and pepper to taste.

5Add more water or stock if you prefer a thinner soup.

6Garnish with a spoonful of sour cream for a creamier texture.
