Ingredients For black bean and pasta soup

  • 3 slice
    bacon
  • 2 can
    black beans, drained
  • 1
    ham hock
  • 1 md
    onion, chopped
  • 4 clove
    garlic, minced
  • 1/2 c
    brown sugar
  • 1 Tbsp
    mushroom ketchup or Worcestershire sauce
  • 2 c
    beef broth
  • salt and pepper
  • dried thyme
  • 1/2 tsp
    red pepper flakes
  • 1 c
    fideo pasta
  • grated Parmesan, to serve, optional

How To Make black bean and pasta soup

    Cook the bacon until crisp and chop. Mix all ingredients together except the pasta and cheese in a pot.

    Bring to a boil. Reduce to a simmer and simmer about 45 minutes. Add the pasta and cook about 15 more minutes. If it isn't soupy enough, add more beef broth or water. Taste and adjust for seasoning.

    Serve with Parmesan cheese, if desired.
