225 grams sourdough discard (100% hydration, 1 cup)
165 grams milk, warmed (2/3 cup)
30 grams granulated sugar (2 Tablespoons)
8 grams instant yeast (2 teaspoons )
55 grams unsalted butter, melted and cooled (4 Tablespoons )
12 grams salt (2 teaspoons)
20 grams cornstarch (2 Tablespoons)
350 grams all purpose or bread flour (2 1/2 cups, see recipe notes)
