an easy, healthy dip/appetizer/snack/light meal. serve with corn chips or on hot dogs as a relish. great on fish sandwiches too. serve as a side dish. serve on a wrap with lettuce.

    black-eyed peas, drain and rinse
  • 1 can
    whole kernel corn, drained and rinsed
  • 2 lg
    tomato, diced
  • 1 lg
    red onion, diced fine
  • 1 pkg
    ranch dressing mix, dry

    mix all together. cover tightly and refrigerate at least 1 hour before serving.
