8 slicecrisp fried bacon

8 ozcream cheese, softened

2 to 4 ozbleu cheese

1/4 citalian dessing

1 Tbspdried parsley flakes (optional)

1Cook bacon to crispy stage, remove from heat and drain on paper towel. Preheat griddle (or heavy skillet) to medium heat. You could also use a sandwich press if you have it. I use my griddle because I can cook all four at once on it. Crumble bacon into bite size pieces. In small mixing bowl, whisk cream cheese, bleu cheese, bacon pieces, parsley (optional) and 2 tablespoons of Italian dressing together. NOTE: Shake Italian dressing well to blend before pouring into measuring cup.

2On clean surface (I use parchment paper or my cutting board), lay out 4 slices of rye bread. Divide cheese mixture into 4 equal amounts and spread on the 4 slices of bread Cover with the remaining 4 slices Brush liberally with Italian dressing and carefully place sandwich with coated side down on griddle. Brush side facing up with remaining Italian dressing. NOTE: Do not turn heat too high or bread will char before cheese melts. Toast approximately 3 minutes until down side is golden brown. Carefully turn over with spatula, and toast the remaining side until golden brown and cheese mixture is melted.
