~ mom's cheddar peanut balls ~

My mom used to have a lot of Beeline & Tupperware parties and was always making little snacks like this to serve to the guests. This was one everyone really seemed to enjoy. You can add your own flavor of seasoning. Curry is what she liked best or she would add chili powder. They're so quick to make and are always a hit. Enjoy!

Ingredients For ~ mom's cheddar peanut balls ~

  • 2 c
    shredded, cheddar cheese - room temperature
  • 3 oz
    softened, cream cheese
  • 2 Tbsp
    finely chopped onion
  • 1/8 tsp
    curry powder, sometimes she would use other seasonings
  • 3/4 c
    chopped peanuts - i use my food porcessor

How To Make ~ mom's cheddar peanut balls ~

    In a medium bowl, beat shredded cheddar with the softened cream cheese. Once thoroughly blended stir in the onion and seasoning. Shape to form balls and roll in chopped nuts. I press as I go with fingers. Cover and refrigerate to blend flavors. Serve at room temperature with crackers.
