1 cwater

1 csugar or splenda

3 Tbsppineapple gelatin mix (jell-o)

3 Tbspcornstarch

20oz canpineapple tidbits or chunks in 100% juice

1 csharp cheddar cheese finely shredded

1 1/2sleeves rita crackers crushed

1/2 stickbutter
-
1/2 cpineapple juice
How To Make hot pineapple casserole

1Preheat oven to 350F. Spray an 8"x8" pan or dish. In a medium pot with medium heat,whisk together water,sugar,pineapple geltin and corn starch until throughly combined and all the lumps are gone. Turn heat up to high and let mixture come to a boil and thickens. Take off heat.

2Drain pineapple throughly, setting a 1/2 cup of juice aside. Add pineapple to pot and stir. While pineapple mixture is cooling,begin making the topping. In a Large ziplock bag finely crush the Ritz crackers. Add crackers,melted butter and pineapple juice into a medium bowl and stir until combined.

3Add shredded cheese to cooled pineapple mixture and pour into baking dish. Spread Ritz topping over pineapple mixture. Bake in oven for about 30-35 minutes(until topping is golden brown). Serve warm. You can use this as a side dish or dessert.
