Everyone loves to snack on something. I like a snack that is crisp and crunchy but also good for you and I love cucumbers and came up with this idea. My oldest son David really enjoyed them. You can make as many as you like, they really hit the spot when you want just a little something and always good on a hot day. I think you will really enjoy this snack.

We were pleasantly surprised at how yummy this simple no-frills snack was. We picked the Triscuit flavor like Eileen recommended (dill, olive oil, and sea salt) but pick your favorite. The flavor went so good with the tangy Greek cream cheese and the crunchy cool cucumber. This is the perfect summertime snack when cucumbers are fresh and it's hot outside. Yum!

Ingredients For cucumber snacks

  • 1 box
    Triscuit crackers - flavor, dill, olive oil and sea salt (or your favorite flavor)
  • 1 md
    cucumber
  • 1
    container of Greek flavored cream cheese or your favorite flavor of cream cheese, 8 oz.

How To Make cucumber snacks

    Place the amount of crackers you want for your snack on a plate. I chose 9 crackers.

    Spread the amount of cream cheese you want on each cracker. Now, thinly slice the cucumber and place the cucumbers on the cream cheese. You can add 1 thin slice per cracker or 2 thin slices per cracker.

    If not eating right away, place plastic wrap over your plate and chill until ready to eat but it is best to eat soon after making the snack. It is crisp, crunchy and healthy good for you! Enjoy!
