I spent years trying to find that perfect caramel corn recipe and finally gave up because they all seemed to come up just a bit short on flavor... until I created this one. It turned out to not be completely new, as I've seen similar recipes since I posted this one. My husband, who is not a fan of popcorn, has refused to try it until this year... I finally convinced him to eat just one piece. That one piece turned into a full gallon Ziploc baggie that was empty within a few hours. It's a holiday favorite within my family and circle of friends, so I hope you enjoy it as much as we do.

Tamara definitely named this caramel popcorn recipe correctly... buttery and sweet it is incredible! Everyone was wondering what the heavenly smell was coming from the Test Kitchen while it was baking. The proportion of caramel to popcorn is spot on. Caramel coats every morsel perfectly. This yummy treat is great for Halloween, game day, a hostess gift or put it in a mason jar with a ribbon for a fantastic homemade Christmas gift.

Ingredients For incredible caramel popcorn

  • 1 1/4 c
    popcorn kernels
  • 1 c
    butter
  • 2 c
    brown sugar, firmly packed
  • 1/2 c
    light Karo syrup
  • 1 tsp
    salt
  • 1 tsp
    baking soda

How To Make incredible caramel popcorn

  • 1
    Preheat oven to 200 degrees.
  • Air-popped popcorn in a large bowl.

    Air-pop popcorn and place in very large heat proof bowl.
  • Butter, brown sugar and corn syrup simmering in a saucepan.

    In large saucepan melt butter, brown sugar, Karo syrup, and salt and bring to boil.
  • Butter, sugar, and corn syrup boiling in a saucepan.

    Allow to boil 3 minutes, stirring constantly.
  • Adding baking soda to sugar mixture off of heat.

    Remove from heat, baking soda.
  • Stirring sugar mixture in a saucepan.

    Stir till light and fluffy.
  • Pouring sugar mixture over popcorn.

    Pour over popcorn and fold till popcorn is evenly coated.
  • Popcorn on two lined baking sheets in the oven.

    Pour onto 2 lined and sprayed cookie sheets. Bake 30 minutes, remove from oven and toss gently again to re-coat popcorn and bake another 30 minutes
  • Caramel popcorn in a resealable bag.

    Let cool and store in airtight container.
