betty's easy caramel popcorn
Chewy, sweet and oh so buttery caramel popcorn. I like LOTS of caramel so I only use 8 cups of popcorn OR I double to caramel. Best enjoyed on day of preparation.

8 - 10 cups popped popcorn

6 tablespoons butter

1/3 cup brown sugar

2/3 cup sugar

1 heaped tablespoon honey or golden syrup

1 teaspoon vanilla
How To Make betty's easy caramel popcorn

1Place the popcorn in a large bowl. Line a large baking tray with baking paper.

2Melt the butter in a heavy based medium sized saucepan over a medium heat. Add the sugars, honey/syrup and vanilla. Bring to the boil over a medium heat and stir often. It will turn golden caramel and become very "frothy".

3Pour over the popcorn and stir like mad! You're going to have to move fast. Pour the caramel coated popcorn onto the lined baking tray and flatten slightly with the spoon. Leave to cool. Best eaten the day of preparation.
