I was feeling like spinach pie for lunch one day, so I whipped this up instead. It tasted awesome...just like my spinach pie, and it only took about 15 minutes to make.

Ingredients For spinach melt pitas

1 1/2 tsponion, finely chopped

1 cfrozen spinach

1 Tbspgarlic infused oil

1 pinchred pepper flakes

salt and pepper, to taste

juice from 1/2 lemon
-
1/4 cmozerella or monterey jack cheese

2 ozfeta cheese, crumbled

1whole wheat pita
How To Make spinach melt pitas

1Use the oil to saute the chopped onion for a minute or two. Add the spinach and cook until it is heated through. Add a small pinch of red pepper flakes, a squeeze of lemon juice, and salt and pepper. Taste and adjust the flavors to your liking.

2Add the cheese to the pan with the spinach. Taste again and add more cheese if you need to.

3Cut the pita in half and carefully open each pocket. Put half of the spinach mixture in each half. Put the pita halves in a sandwich press and heat until toasty (2-3 minutes).

4Serve on own or with some heated marinara sauce.
