spicy pimento cheese spread

I have always loved pimento cheese but have never made it myself. Mom's recipe of shredded cheese and mayonnaise (or the store-bought spread) was all I had ever tasted until I tasted a "Pimento Cheese Dip" that I really liked. The only thing that I was told was that it also had cream cheese in it but I could tell there was something else. Well, I decided to experiment and make my own version of the tasty spread/dip. It's great on a quick sandwich, wonderful on a grilled-cheese sandwich or served as a dip with tortilla chips and/or your favorite snack cracker.

Ingredients For spicy pimento cheese spread

  • 2 c
    shredded cheddar cheese
  • 1/2 c
    mayonnaise (i use salad dressing)
  • 4 oz
    cream cheese, softened
  • 1/4 tsp
    garlic salt
  • 1/4 tsp
    onion powder
  • 1 jar
    (4 oz) pimentos, drained and diced
  • 1
    jalapeno pepper, finely diced (seeded and deveined for less heat)
  • salt and pepper to taste

How To Make spicy pimento cheese spread

    Place mayonnaise and cream cheese in a mixing bowl and, using a spatula, blend slowly until combined well.

    Add the remaining ingredients and mix until combined.

    Add salt and black pepper to taste.

    Refrigerate in an air-tight container.

    SERVING SUGGESTIONS: It's great on a quick sandwich, wonderful on a grilled-cheese sandwich or served as a dip with tortilla chips and/or your favorite snack cracker.
