My mother used to make these when she had left over pie dough. I still enjoy making them and even make pie crust just to make these cookies.

Ingredients For pie crust cookies

your favorite pie crust recipe
-
butter at room temperature
-
sugar
-
cinnamon
-
ground nutmeats *optional*
How To Make pie crust cookies

1roll out left over pie crust 1/8" thick
-
2cut with round cookie cutter ( my mother used a drinking glass )

3place on cookie sheet
Spread with butter
Sprinkle heavy with sugar and cinnamon
lightly sprinkle with nutmeats -
4bake in preheated 375 degree oven 10 to 15 minutes, or when slightly golden
