My mother used to make these when she had left over pie dough. I still enjoy making them and even make pie crust just to make these cookies.

Ingredients For pie crust cookies

  • your favorite pie crust recipe
  • butter at room temperature
  • sugar
  • cinnamon
  • ground nutmeats *optional*

How To Make pie crust cookies

  • 1
    roll out left over pie crust 1/8" thick
  • 2
    cut with round cookie cutter ( my mother used a drinking glass )
  • 3
    place on cookie sheet Spread with butter Sprinkle heavy with sugar and cinnamon lightly sprinkle with nutmeats
  • 4
    bake in preheated 375 degree oven 10 to 15 minutes, or when slightly golden Store in airtight container
