In most Chicano communities we are visited by eloteros, (corn vendors) that serve this dish either on the cob or in a dish. However, the eloteros stop traveling once the weather is too cold. So for those of us in cold weather climates; this is a simple and quick snack to sate our winter cravings.

Ingredients For mexican style street corn

1 canwhole kernel corn

1/4 stickbutter
-
1 Tbspmayonnaise

1/2 cgrated cotija cheese, can be substituted with parmesan

1 or 2 tspcayenne pepper
How To Make mexican style street corn

1Open can of corn and empty all water.

2Add butter, and prepare corn either on stove top or microwave.

3Once you reach desired temperature remove corn from heat and place in serving bowl. Add mayonnaise, and cheese. Mix well.

4Sprinkle cayenne as liberally as you can handle and serve.
