maple cinnamon almond chex mix
I decided to play around with a Chex Mix recipe one day and came up with this. I made the mistake of shipping a batch to my husband and some of his fellow soldiers while he was deployed. I learned all about supply and demand after that. I had to make double and triple batches and they still ate it faster than I could make it. Hope you enjoy it as much as we do. It's a definite keeper! This makes a big batch of Chex mix. It can be halved with no problems. Also, maple extract is pretty potent. If you'd like a stronger maple flavor, you can increase it to 3/4 tsp.

12 ozcinnamon Chex cereal

9 ozrice Chex cereal

10 - 12 ozsliced almonds

1 1/2 cwhite sugar

1 1/2 clight corn syrup

18 Tbspbutter, no substitute

1 pinchsalt
-
1/2 tspmaple extract
How To Make maple cinnamon almond chex mix

1Mix the cinnamon Chex, rice Chex, and almonds in a large plastic bowl.

2In a heavy saucepan over medium heat, bring the sugar, corn syrup, salt, and butter to a boil. Stir occasionally until it turns golden and coats the back of a spoon; approximately 4 1/2 - 5 minutes.

3Remove from heat and add the maple extract.

4Stir well.

5Immediately pour over the cereal mixture and stir to coat.

6Spread onto parchment paper and let cool. Store tightly covered.
