I found this cookbook in a Thrift Store. It's dated 1917. Many of the pages are torn or ripped out. I just had to share this. Remember its from 1917.

Ingredients For fried duck feet from 1917

  • this is what is written above the recipe. you may laugh all you want. you will soon be convinced that this is the best part of the duck.
  • 20
    pairs of duck feet
  • 2 c
    chopped bamboo shoots
  • 2 c
    mushrooms. cut the larger ones.
  • 2 c
    water chestnuts cut into thin pieces.

How To Make fried duck feet from 1917

    Wash thoroughly 20 pairs of Duck feet and plunge them in boiling water for 3 minutes.

    Take off the skin. Take out all the bones without spoiling the shape of the feet. Cut each foot into 2 pieces.

    Have a hot stove. Oil the frying pan and fry the feet for 5 minutes. Add salt, bamboo shoots, chestnuts & mushrooms. Continue to fry for 5 minutes after having mixed well.

    Add enough primary soup or water to cover all. Cook until tender.

    Add Chinese gravy & mix well
