I found this cookbook in a Thrift Store. It's dated 1917. Many of the pages are torn or ripped out. I just had to share this. Remember its from 1917.

20pairs of duck feet

2 cchopped bamboo shoots

2 cmushrooms. cut the larger ones.

2 cwater chestnuts cut into thin pieces.
How To Make fried duck feet from 1917

1Wash thoroughly 20 pairs of Duck feet and plunge them in boiling water for 3 minutes.

2Take off the skin. Take out all the bones without spoiling the shape of the feet. Cut each foot into 2 pieces.

3Have a hot stove. Oil the frying pan and fry the feet for 5 minutes. Add salt, bamboo shoots, chestnuts & mushrooms. Continue to fry for 5 minutes after having mixed well.

4Add enough primary soup or water to cover all. Cook until tender.

5Add Chinese gravy & mix well
