Ingredients For energy berry bites

2/3 cshredded coconut flakes, unsweetened

1/4 cflaxseed

1/4 cwheat germ

3/4 cwhole rolled oats

3/4 cpeanut butter, melted

1/3 cagave nectar

2 Tbspgoji berries, soaked in water for 15 minutes, if needed

2 Tbspdried blueberries
-
1 Tbsppumpkin seeds
-
1 Tbspsunflower seeds

1 Tbspchia seeds
-
1 pinchground himalayan sea salt
How To Make energy berry bites

1In a small skillet over medium heat, toast coconut flakes until golden. Remove from the heat and let it cool.

2Place flaxseed in a spice grinder and process until well ground.

3In a large bowl, combine oats, toasted coconut, flaxseed meal, wheat germ, peanut butter, agave nectar, goji berries, blueberries, pumpkin seeds, sunflower seeds, chia seeds and sea salt; stir well.

4Transfer to the refrigerator for 30 minutes to chill.

5When ready to roll, wet hands lightly so the mixture doesn't stick and form ball to about 1 1/2-inch diameter.
