We had house guests a few weeks ago, my friend insisted on making a snack late one night when we were all awake,it was delicious.She made one for me without bacon,she says sometimes she adds sausage.The salsa is optional but it was really tasty,use your favorite.

Ingredients For egg boats

  • 2 baguettes
  • 4 eggs
  • 2 t. heavy cream
  • 6 slices bacon
  • 1/2 c cheddar cheese
  • 1/4 c green onions,chopped
  • salt and pepper,to taste
  • salsa,optional

How To Make egg boats

    Preheat oven to 350F . Cut bacon slices into smaller pieces and cook until crisp. Set aside to cool. In a medium bowl, mix eggs, cream, cheese, bacon and onions. Season with salt and pepper. Cut a deep “V” through the top of the baguette and remove part of the bread . Place the baguettes on a parchment paper lined baking sheet. Spoon the egg mixture into the prepared baguettes. Bake for 20-25 minutes until golden brown, and egg mixture is set. 7.Allow to cool for about 5 minutes, cut and serve while still warm.
