Ingredients For caramel corn snack mix

  • 8 c
    popped popcorn
  • 4 c
    rice chex
  • 2 c
    mini pretzels (omit)
  • 1 c
    pecan halves (use pieces instead)
  • 1 c
    packed brown sugar
  • 1/2 c
    butter
  • 1/4 c
    light corn syrup
  • 1 tsp
    vanilla
  • 1 tsp
    baking soda

How To Make caramel corn snack mix

    Oven to 300 degrees. Mix popcorn, chex, pretzels and pecans. In 2 quart saucepan combine brown sugar, butter and corn syrup. Cook over medium heat, stirring, until it comes to a boil over entire surface. Reduce heat to medium low and cook 5 minutes without stirring. Remove pan from heat. Quickly stir in vanilla and soda, stirring carefully. Pour over popcorn and stir until well coated. Bake 30 minutes, stirring after 15 minutes. Put onto a large piece of parchment paper. Cool completely, breaking into clusters as it cools.

    Note: if using microwave popcorn, use a reduced fat (light or natural) type to get best results.
