These tasty little flaky pastry bites are delicious and moreish! I regularly make for my children and their lunch boxes, or when we have get togethers. These little morsels are super easy, tasty and can be made ahead of time and re-heated OR rolled up (and covered) cut later and cooked fresh (they store well for up to 2 days ready for baking). I have made over 300 of these for a 21st party and they were gone in less than 20 minutes.

    sheets of puff pastry
  • 1/4 lb
    deli ham (i like honey ham or double smoked)
  • 1/4 c
    mustard (i like dijon or honey mustard)

How To Make betty's ham and mustard mini scrolls

    Pre-heat oven to 375oF/180oC and place baking paper over 3 cookie trays.

    Unravel the pastry sheets and add half a spoonful to each sheet. Use the back of the spoon to smear it. It will not cover the whole sheet, but rather about 2/3 (keep the top half mustard free - or you'll have it squeeze out as you're rolling. Top the lower end (which you will be rolling up first) with a slice or two of ham (tear if needed, is should only be a single layer).

    Roll up the sheets, start at the end where the ham was layed out and roll as tightly as you can. Cut with a sharp knife into 14 - 16 slices. Place on the prepared trays and allow spreading room. Bake for 25 minutes. Cool and store in the fridge for lunch boxes, afternoon teas or when a snack attack hits.
