This recipe is easy and fast. These nuts are great on spinach salad with fruit or just as a snack. Makes a great gift too!

Ingredients For sugared walnuts

3 1/2 cwalnut halves

1 csugar

1/2 cwater, cold

1 tspcinnamon

1/2 tspsalt

1 1/2 tspvanilla extract
How To Make sugared walnuts

1Place nuts on a cookie sheet and heat in a 350 degree oven for 10 min. stirring once. In the meantime, butter the sides of a 2 qt. heavy bottom sauce pan. Add sugar, cinnamon, salt and water. Over medium heat, stir until sugar dissolves and mixture comes to a boil. Cook without stirring to soft ball stage (236 degrees on candy thermometer)

2Remove from heat, add vanilla and stir with wire whisk until mixture starts to become creamy (approx. 1 min.)Add warm nuts and stir gently until nuts are completely coated. Turn onto a cookie sheet to cool and immediately separate. Cool completely before storing in an air tight container. Will keep in the freezer quite a while
