I think we've been making peanut brittle this way since we got our first microwave:) Don't know how or where we got the recipe but I've been making it with the grandchildren for over twenty years. You'll never believe how easy and delicious this peanut brittle is to make and eat! I've, also done it with walnuts and they were just as good. This holiday peanut brittle makes excellent gifts! My co-workers starting asking for this after Thanksgiving! Enjoy!

Ingredients For microwave peanut brittle (connie's)

1 1/2 craw peanuts (or walnuts)

1 cgranulated sugar

1/2 clight corn syrup

1/8 tspsalt

1 tspbutter
-
1 tspvanilia extract, the good stuff

1 tspbaking soda, fresh
How To Make microwave peanut brittle (connie's)

1Combine nuts, sugar, corn syrup, and salt in a 1 1/2 quart microwave safe container.

2Cook 8 minutes on high in microwave oven stirring well after 4 minutes. (Be very careful, this mixture gets very hot)

3Stir in butter and vanilla.

4Microwave another 2 minutes on high.

5Add baking soda and quickly stir until light and foamy.

6Immediately pour onto lightly greased baking sheet; spread to 1/4 inch thickness.

7When cool break into pieces.

8Store in airtight container.
