This cracker zucchini cheddar casserole is truly addicting. You can use yellow squash and or zucchini. I have made it for gatherings, and people who don't usually like zucchini love it!

Cheesy and comforting, this zucchini cheddar casserole is an easy side dish for a family dinner or potluck. It's filled with zucchini and onions mixed into a creamy, cheesy sauce. Crumbled buttery crackers are sprinkled on top and become even crunchier when baked. Warm, filling, and delicious, this casserole is made with simple ingredients.

Ingredients For ritz zucchini cheddar casserole

  • 3 Tbsp
    butter
  • 4 c
    thinly sliced zucchini
  • 1/2 c
    diced sweet onion
  • salt and pepper, to taste
  • 1 pkg
    buttery crackers, about 35 crackers
  • 1 c
    shredded cheddar cheese
  • 2 lg
    eggs, beaten
  • 3/4 c
    milk

How To Make ritz zucchini cheddar casserole

  • Saute thinly sliced zucchini and diced onion in butter.

    Preheat the oven to 400 degrees F. In a large frying pan, saute zucchini and onion in butter until soft and transparent. Add salt and pepper. Set aside.
  • Mix crushed crackers and cheddar cheese. Remove half of the mixture. Add zucchini to remaining cracker mixture.

    In a large bowl, mix crushed crackers and cheddar cheese. Place 1/2 of the cracker/cheddar mixture into the sauteed zucchini and onions. Reserve the other 1/2 as the topping.
  • Whisk eggs and milk. Pour over the zucchini mixture.

    In a separate medium bowl, whisk the eggs and milk. Pour this into the zucchini mixture and mix.
  • Pour zucchini into a baking dish and top with remaining cracker mixture.

    Place the zucchini mixture into a 2-quart baking dish. Top with the remaining cracker/cheddar mixture.
  • Bake until golden brown.

    Bake for 20-25 minutes or until golden brown on top.
