Ingredients For ritz zucchini cheddar casserole

3 Tbspbutter

4 cthinly sliced zucchini

1/2 cdiced sweet onion

salt and pepper, to taste

1 pkgbuttery crackers, about 35 crackers

1 cshredded cheddar cheese

2 lgeggs, beaten
-
3/4 cmilk
How To Make ritz zucchini cheddar casserole

1Preheat the oven to 400 degrees F. In a large frying pan, saute zucchini and onion in butter until soft and transparent. Add salt and pepper. Set aside.

2In a large bowl, mix crushed crackers and cheddar cheese. Place 1/2 of the cracker/cheddar mixture into the sauteed zucchini and onions. Reserve the other 1/2 as the topping.

3In a separate medium bowl, whisk the eggs and milk. Pour this into the zucchini mixture and mix.

4Place the zucchini mixture into a 2-quart baking dish. Top with the remaining cracker/cheddar mixture.

5Bake for 20-25 minutes or until golden brown on top.
