This is my mother's version of pimento cheese spread. Serve with your favorite crackers. This can be frozen ahead of time and then thawed in the fridge the day before a holiday or picnic/cookout.

Blue Ribbon Recipe

Not your traditional Southern pimento cheese, but it's creamy and slightly sweet with plenty of pimentos in each bite. It comes from a time when Miracle Whip and processed cheese were popular. But there are also 2 pounds of shredded cheddar cheese, so very cheesy. We'd never added sugar, but it does add a slight sweetness we enjoyed. If you don't like, Velveeta or Miracle Whip, sub them for mayonnaise and more cheddar cheese. The taste will be different, but this is a basic pimento cheese recipe that can be tweaked to suit taste buds. It's delicious spread on crackers or turned into a sandwich with white bread.

Ingredients For incredible pimento cheese spread

  • 1 lb
    Velveeta cheese
  • 1 lb
    medium cheddar cheese
  • 1 lb
    sharp cheddar cheese
  • 1 pt
    Miracle Whip salad dressing
  • 8 oz
    pimento, drained and chopped
  • 3 Tbsp
    granulated sugar
  • salt and pepper, to taste

Velveeta can be hard to grate. To make it easier, place it in the freezer for an hour before grating.
  • Shred all of the cheese and allow to come to room temperature.

    Grate all of the cheeses or cut into small pieces. Allow to soften at room temperature.
  • Combine cheese with the remaining ingredients.

    Combine all ingredients and blend by using a mixer, blender, or food processor. It may be necessary to divide ingredients into two batches unless you have a very large mixing container.
  • Incredible Pimento Cheese Spread on crackers.

    Store leftovers in the fridge. Can be frozen.
