Ingredients For guacamole with chips

  • 1 md
    ripe avocado
  • 1 c
    cottage cheese, lowfat
  • 1 Tbsp
    lime juice
  • 1 tsp
    chives, chopped
  • 1/4 tsp
    red pepper flakes
  • 7 oz
    pkg. corn tortillas
  • 2 tsp
    corn oil
  • small head leaf lettuce
  • assorted raw vegetables

How To Make guacamole with chips

  • 1
    Halve and peel avocado and cut into chunks. Place in a blender with cottage cheese, lime juice, chives, and red pepper flakes. Blend to desired consistency. Refrigerate for 2 hours.

    Just before serving, preheat oven to 400 degrees F. Brush tortillas lightly with oil. Cut each tortilla into 8 triangles and place on a baking sheet. Bake for 5-6 minutes or until browned and crisp.

    Line a serving bowl with lettuce leaves and mound the guacamole on top. Serve with tortilla chips and raw vegetables.
