I am a stay at home mom with a home-based business. During the day I get so busy in my routine of doing that I forget to take time to eat. I like to have this on hand to snack with chips so I don't have to stop and eat a meal. I also like stuffing hard boiled eggs with this. Festive for the holidays and a great go-to anytime snack.

2 mdavocados, halved and seeded

1/4 cbottled green salsa verde

1 Tbspsour cream

1/2 cfinely chopped fresh pineapple, or canned crushed pineapple-drained

1/2 cblack beans, drained and rinsed

1 smjalapeno pepper, seeded and diced

2 Tbspminced red onion

2 Tbspchopped fresh cilantro

1 Tbspminced garlic

1 Tbsplime juice

1/4 tspsalt

1/4 tspground cumin
-
1/4 cshredded Monterey Jack cheese
How To Make giddyup guacamole

1In a large bowl, mash the avocados.

2Stir in salsa and sour cream until combined.

3Stir in pineapple, beans, jalapeno, onion, cilantro, garlic, lime juice, salt, and cumin.

4Cover and chill for 2 hours or until ready to serve.

5Sprinkle with Monterey Jack cheese. Serve with tortilla chips.
