A girlfriend and I went to an outdoor cafe where we ordered this dish. We were so pleased with the flavors and the light freshness, we just couldn't get enough. I came home and replicated the dish. I am asked to bring this side dish to every party, BB'q or get together we go to. Any combination of vegetables can be used but the ones listed below are my go to's. I hope you enjoy as much as we all do.

Ingredients For fresh black bean salsa

  • 2 can
    15 oz black beans, drained and rinsed
  • 4
    fresh tomatoes, seeded and diced
  • 2
    cucumbers, peeled, seeded and diced
  • 4
    jalapeno peppers, seeded and diced
  • 1
    medium red onion, diced
  • 1
    red pepper, seeded and diced
  • 1/2
    bunch fresh cilantro, chopped
  • 2
    ears fresh corn (optional), kernels removed from cob
  • salt and pepper to taste
  • 1/4 c
    vegetable oil
  • 1/2 c
    red wine vinegar

How To Make fresh black bean salsa

    Drain and rinse beans thoroughly. Place in large bowl. Dice and add all ingredients into bowl. Season with salt and pepper to taste, add oil and vinegar. Mix well. Refrigerate and serve chilled with tortilla chips.
