8 oz. sliced mushrooms

1 C. onion, diced

3 tbsp all-purpose flour

3 tbsp butter

1 tsp kosher salt

1/4 tsp pepper

2 tbsp fresh lemon juice

1 C. Gruyere cheese, grated (I used a mix of Mozzarella and Smoked Cheddar)

1/4 C. fresh parsley, minced (I used dried)
