3 cups low sodium chicken broth
1.5 lbs Russet or gold potatoes (peeled and diced (about 4 medium))
2 cups chopped kale
1/2 teaspoon salt
1/8 teaspoon black pepper
3/4 cup cream ((10-30% will work fine))
1/4 cup shredded Parmesan cheese
1 pinch red pepper flakes (optional, for extra spice)
