1 ounce bittersweet chocolate, chopped (yes, chocolate!)

5 carrots, peeled and cut into 1-inch chunks

1 lb parsnips, peeled and cut into 1-inch chunks

1-1/2 lbs baby red potatoes (about 24), scrubbed
