3 lbs. chuck roast or beef cheek
5 dried ancho chiles, stems and seeds removed
5 dried guajillo chiles, stems and seeds removed
3 cups water
1 Tbsp. apple cider vinegar 
1 small tomato, quartered
1 small onion, quartered 
5 cloves garlic
2 tsp.oregano
2 tsp. Kosher salt 
½ tsp. coarse ground black pepper 
2 bay leaves
