Ingredients For zuchinni triangles

  • 6
    eggs
  • 3/4 c
    smart balance or olive oil
  • 1 1/2 c
    baking mix of choice
  • 3/4 tsp
    seasoning salt
  • 3 Tbsp
    parsley flakes
  • 3/4 tsp
    basil, dried
  • 3/4 tsp
    oregano, dried
  • 1/8 tsp
    cayenne pepper...optional
  • 1 lb
    zuchinni...sliced
  • 1
    small red onion sliced thin
  • 3/4 c
    parmesan cheese
  • 1 c
    grated colby jack cheese
  • coarse ground pepper to taste

How To Make zuchinni triangles

  • 1
    mix eggs, oil, seasonings, baking mix and cheeses.

    fold in the zuchinni

    pour into a greased 9x13 pan top with onion slices

    bake at 350 for 25 minutes

    cut into triangles or squares can be enjoyed hot or cold!
