We have a garden every year and we love the fresh veggies. I think I have made zucchini dishes in every way imaginable and still find more each year. This one is quick and easy while the chicken or other meat is on the grill.

This zucchini and vegetable side dish sounds straightforward but there is a secret ingredient that makes it hearty. Fresh tomatoes and zucchini are cooked with onions and garlic that enhance the flavor of the fresh vegetables. A very small amount of cooked macaroni adds heartiness and is unexpected. Chopped parsley adds a fresh, earthy flavor to the side dish. This would be delicious alongside grilled chicken.
