Ingredients For zucchini strips

  • 4 sm
    zucchini
  • 3 Tbsp
    flour
  • 1/2 tsp
    salt
  • 1/8 tsp
    pepper
  • 1
    egg, slightly beaten
  • 1/2 c
    cracker crumbs
  • 1/2 c
    cooking oil
  • 1 Tbsp
    lemon juice

How To Make zucchini strips

  • 1
    Wash and trim zucchini, but do not peel. Cut into 1/2-inch wide strips. Combine flour, salt and pepper. Coat strips of zucchini with flour mixture. Dip in beaten egg and then in crumbs. Fry in hot oil until golden brown. Sprinkle with lemon juice. Makes 4 servings.
