This salad was really easy to make and it came together in almost no time. The key to this salad though is letting it chill in the fridge for a couple of hours to let the flavors come out and mingle so you will want to plan on making it ahead of time. The sweet carrot, fresh green veggies, tart lemon and herbs really come together to make this salad vibrant, light and fresh. This salad is nice and refreshing when served chilled from the fridge on warm summer day, like I did this Labor Day Weekend.

Ingredients For zucchini salad

2 czucchini grated

1 ccarrot grated

1 ccucumber grated

1handful chopped parsley

1 tspmint, dried

1 tspdill, dried

1/2 clemon, juice and zest

1 Tbspolive oil, extra virgin

1 clovegarlic grated

salt and pepper to taste
How To Make zucchini salad

1Mix the zucchini, carrots, cucumber, parsley, mint, and dill in a large bowl.

2Mix the lemon juice, zest, olive oil, garlic, salt and pepper in a small bowl.

3Toss the salad and the dressing.

4Chill in the fridge for several hours to overnight before serving.
