Ingredients For zucchini pizza casserole

3 1/2 cshredded zucchini

3eggs
-
1/2 citalian bread crumbs

1/4 cflour
-
2 tspitalian seasoning

2 tspolive oil
-
1 canpizza sauce (about 14 oz)

1bell pepper, chopped
-
1onion, chopped
-
1 1/2 cshredded part-skim mozzarella cheese (6 oz)

1/4 tspsalt
How To Make zucchini pizza casserole

1Place shredded zucchini in a colander over a plate and sprinkle with salt and toss. Let stand for 15 minutes. Rinse and drain well.

2In a bowl, combine zucchini, eggs, bread crumbs, and Italian seasoning.

3Spread in a 11 inch by 7 inch by 2 inch baking dish which has been coated with cooking spray.

4Bake uncovered in a preheated 350 degree oven for 25 minutes.

5In a nonstick pan saute onion and pepper.

6Spread half of the pizza sauce over the baked zucchini mixture. Sprinkle with the sauteed onion and pepper. Sprinkle with half the cheese. Top with remaining pizza sauce and cheese.

7Bake 15 minutes longer or until hot and bubbly.
