I got this recipe from a friend of my mothers back in the early 80's. Her name was Elaine, and she has since passed. I've made it many times and it's a family favorite of ours. I especially love making it when we have an abundance of zucchini from our garden. Yum! Note: You may also add finely chopped onions and even shredded carrots for a extra flavor and color.

Ingredients For zucchini patties

3 czucchini, grated
-
1/3 cparmesan cheese, grated

1 cbiscuit mix
-
1egg, beaten
-
1 clovegarlic, crushed

1 tspitalian seasoning

salt & pepper, to taste
How To Make zucchini patties

1Mix all ingredients together and drop by spoonfuls into hot skillet with 1/4" oil in it. Note: I like using Canola oil myself.

2Fry on each side until golden brown.
