I want to say here that you can add any vegtable you like. I love hot peppers so I chop them up and add to the mixture. I got this recipe off of All Recipes. Everyone just loves these, you can eat cold or hot. I also double the recipe, they fly out of my fridge with my family and friends.

Ingredients For zucchini patties

  • 2 c
    grated zucchini (squeez out excess water)
  • 2
    eggs beaten
  • 1/4 c
    chopped onion
  • 1/2 c
    all purpose flour
  • 1/2 c
    grated parmesan cheese
  • 1/2 c
    shredded mozzarella
  • salt to taste
  • 2 Tbsp
    vegetable oil

How To Make zucchini patties

  • 1
    In a medium bowl, combine the zucchini, eggs, onions, flour, Parmesan cheese, Mozzarella cheese, and salt. Stir well enough to distribute ingredients evenly.

    Heat a small amount of oil in a skillet over medium-high heat. Drop zucchini mixture by heaping tablespoonfuls, and cook for a few minutes on each side until golden
