I love zucchini and am always looking for new ways to cook it. This sounds simple and good.

Ingredients For zucchini parmesan

  • 1 Tbsp
    butter
  • 2 tsp
    garlic, minced
  • 4 sm
    zucchini, halved lengthwise
  • salt and pepper, to taste
  • grated parmesan cheese, to taste

How To Make zucchini parmesan

  • 1
    Preheat the broiler.
  • 2
    Melt the butter in a large ovenproof skillet. (Cast-iron works well). Add the garlic and saute over medium-low heat for about 30 seconds, being careful to let the garlic brown.

    Place the zucchini halves cut-side down in the garlic butter and sprinkle lightly with salt and pepper.

    Saute over medium high heat for about 5 minutes, or until the zucchini are just slightly tender when poked with a fork or knife tip.

    Turn the zucchini over, and sprinkle generously with Parmesan.

    Cook for 1-2 minutes, then transfer the skillet to the broiler.

    Broil for about 3 to 5 minutes, or until the cheese is melted and golden brown.

    Serve hot.
