Ingredients For zucchini parmesan

1 Tbspbutter

2 tspgarlic, minced

4 smzucchini, halved lengthwise

salt and pepper, to taste

grated parmesan cheese, to taste
How To Make zucchini parmesan

1Preheat the broiler.

2Melt the butter in a large ovenproof skillet. (Cast-iron works well). Add the garlic and saute over medium-low heat for about 30 seconds, being careful to let the garlic brown.

3Place the zucchini halves cut-side down in the garlic butter and sprinkle lightly with salt and pepper.

4Saute over medium high heat for about 5 minutes, or until the zucchini are just slightly tender when poked with a fork or knife tip.

5Turn the zucchini over, and sprinkle generously with Parmesan.

6Cook for 1-2 minutes, then transfer the skillet to the broiler.

7Broil for about 3 to 5 minutes, or until the cheese is melted and golden brown.

8Serve hot.
