Ingredients For zucchini pancakes

1/3 cbiscuit baking mix

1/4 cgrated parmesan cheese

1/8 tspfreshly ground black pepper

2eggs, slightly beaten

2 cshredded zucchini*

2 Tbspbutter
How To Make zucchini pancakes

1In a bowl, combine the biscuit mix, Parmesan cheese, pepper and eggs until blended. Add the zucchini; mix well.

2In a large skillet, melt butter. Drop batter by 1/3 cupfuls into skillet; press lightly to flatten. Fry until golden brown, about 3 minutes on each side.

3Garnish with fresh dill. *Yellow squash may substituted for the zucchini.
