This was a recipe from TOH that I tweaked to my preferences. Very Yummy way to use up those zucchini's. Use the spices you like...I am always changing the spices. I also have added bacon to this, which was quite tasty. Enjoy!

Ingredients For zucchini onion pie

3eggs
-
1 cgrated parmesan cheese or have used cheddar cheese

1/2 ccanola oil ( that is correct 1/2 cup ) helps to brown the crust

1 Tbspfresh or dried parsley

2 - 3 clovegarlic, minced

1/2 tspitalian seasoning

1 tspsalt

1/2 tsppepper
-
3 csliced zucchini
-
1 cbiscuit/baking mix

1 mdonion, chopped fine or 1 cup green onions sliced
How To Make zucchini onion pie

1Preheat oven to 350 degree F.

2In a large bowl, whisk the first eight ingredients. Stir in the zucchini, baking mix and onion. Pour into a greased 9-in. deep-dish pie plate. Bake at 350° for 40 - 45 minutes or until lightly browned. You could add ham, bacon, different spices and cheeses. A very good recipe!
