This is another tasty dish I make with the abundant zucchini I have in the garden.

Ingredients For zucchini fritters

  • 1/4 cup buttermilk
  • 1 egg,beaten
  • 1/2 c panko
  • 1/2 c seasoned breadcrumbs
  • 1/4 c parmesan cheese,freshly grated
  • 1 1/2 t. taco seasoning
  • 1/2 t. garlic powder
  • 3 medium zucchini,cut into 1/4 inch slices

How To Make zucchini fritters

  • 1
    In a shallow bowl, combine buttermilk and egg. In another shallow bowl, combine the bread crumbs, cheese, taco seasoning and garlic salt. Dip zucchini in buttermilk mixture, then bread crumb mixture. Place on baking sheets coated with cooking spray. Bake at 400° for 20-25 minutes or until golden brown, turning once.
