2 czucchini, grated and drained

1/3 cparsley, chopped

1/4 tspdried dill

1/4 tspdried mint

1/2 tsponion powder

1/2 tspgarlic powder

1/2 tspsalt

1/2 tspground black pepper

1/2 call purpose flour
-
1egg
-
2 Tbspolive oil, extra virgin
- TZATZIKI
-
1single serving container of yoplait greek yogurt or your favorite plain yogurt

1baby cucumber, grated and drained, or about 1/4 cup grated, drained cucumber

1/8 tspdried dill

1/8 tspgarlic powder

1/8 tspsalt
How To Make zucchini fritters with tzatziki

1Mix the zucchini, chopped parsley, herbs, egg, salt and pepper in a bowl. Slowly add flour, mixing to batter like consistency.

2Heat the olive oil in a pan.

3Spoon 2-3 Tbl of the zucchini mixture into the pan, spreading slightly to flatten. Cook until golden brown on both sides, about 4 minutes per side.

4To make Tzatziki sauce, mix yogurt, cucumber, dill, garlic powder and salt well.
