1/2 cPanko bread crumbs

5 smzucchini or as many as you like

1 tspItalian seasoning

1/2 tspgarlic powder

1/4 cgrated Parmesan cheese

For step 5, we opted to use parchment paper because we've found that prevents bread crumbs from sticking best. The sserving size depends on the size of the zucchini.

1Combine the Panko crumbs, spices, and cheese.

2Put eggs in a shallow pie plate and whisk eggs.

3Cut the ends of the zucchini off and cut into quarters or smaller, lengthwise. The smaller your wedge of the zucchini is the crisper it will be.

4Dip a few of the zucchini sticks in the egg mixture one at a time. Then coat with crumbs and spice mixture.

5Spray a cookie sheet with non stick cooking spray. Place zucchini on cookie sheet.

6Bake at 425 degrees for 10 minutes. Take out and turn zucchini over.

7Bake for another 10 minutes or until coating is golden brown. Serve with pizza sauce or ranch dressing.
