zucchini fans

I saw this recipe on Facebook and it looked so easy and good to me. It is an easy way to have zucchini. I also made these up early in the day and put them into the refrigerator until dinner time when I baked them along with a smoked pork chop.

Ingredients For zucchini fans

  • 2 md
    zucchini
  • 1 md
    roma tomato
  • 1 clove
    garlic
  • salt and pepper to taste
  • 2 pinch
    herbs of provence or italian seasoning

How To Make zucchini fans

    Fan zucchini by cutting slices from just below the stem to the end.

    Put thin slices of Roma tomato between the fans along with thin slices of garlic.

    Salt and pepper the zucchini and sprinkle on herbs of choice.
  • 4
    Put on a foil lined sheet pan that has a bit of olive oil on it. Sprinkle zucchini with olive oil and bake in a 400 degree oven for 20 to 25 minutes.

    I think this would also be good with some cheese sprinkled on top at the end of the baking. I will do that the next time I make these.
