A delicious use of zucchini that often comes in abundance this time of year. This recipe uses a large zucchini and these will disappear so fast you won't believe it.

Ingredients For zucchini corn fritters

  • 1 lg
    zucchini, peeled, seeded, shredded and squeezed to remove moisture. approx 2 1/2 to 3 cups
  • 2
    ears of corn, removed from cob
  • 1/2
    medium onion, grated
  • 1 box
    corn muffin mix (jiffy)
  • 1/2 c
    flour
  • 1
    egg
  • 1/3 c
    heavy cream
  • 1/2 tsp
    thyme, dried
  • 1/2 tsp
    ground rosemary
  • 1/2 tsp
    garlic powder
  • 1/4 tsp
    seasoned salt

How To Make zucchini corn fritters

    Mix all ingredients until well blended. Let batter sit for a few minutes.

    Heat a small amount of vegetable oil in skillet. Drop by tablespoons into skillet 3-4 at a time. Fry 4-5 minutes on each side.

    Remove from skillet and drain on paper towels. Salt and pepper to taste and serve with your favorite sauce or jam.
