Ingredients For zucchini corn fritters

1 lgzucchini, peeled, seeded, shredded and squeezed to remove moisture. approx 2 1/2 to 3 cups

2ears of corn, removed from cob

1/2medium onion, grated

1 boxcorn muffin mix (jiffy)

1/2 cflour
-
1egg
-
1/3 cheavy cream
-
1/2 tspthyme, dried
-
1/2 tspground rosemary

1/2 tspgarlic powder

1/4 tspseasoned salt
How To Make zucchini corn fritters

1Mix all ingredients until well blended. Let batter sit for a few minutes.

2Heat a small amount of vegetable oil in skillet. Drop by tablespoons into skillet 3-4 at a time. Fry 4-5 minutes on each side.

3Remove from skillet and drain on paper towels. Salt and pepper to taste and serve with your favorite sauce or jam.
