In yet another attempt to foster a love for vegetables in my child, I came up with a quick way to make zucchini more kid-friendly. It's a bit like breaded/fried zucchini but without the oil and just enough breading to add some crunch. Next time I plan to add a little grated Parmesan cheese.

These zucchini chips are slightly crisp on the outside and tender in the center. Cooking them under the broiler makes the bread crumbs nice and crispy. Easy to throw together, they're a great snack or side dish and another tasty way to use extra zucchini. So good!

Ingredients For zucchini chips

  • 2 md
    zucchinis or yellow squashes
  • 1
    egg
  • 1/2 c
    bread crumbs, dry
  • 1 tsp
    Italian seasoning
  • salt & pepper, to taste

How To Make zucchini chips

To make the slices even we (carefully) used a mandolin.

    Preheat oven broiler.
  • Sliced zucchini circles.

    Wash and slice zucchini into 1/4" rounds.
  • Zucchini rounds placed on baking sheet.

    Place onto greased baking sheet.
  • Coating zucchini rounds with egg wash.

    Lightly beat egg in a small bowl and use a basting brush to coat both sides of the slices with egg wash.
  • Sprinkling bread crumbs onto zucchini rounds.

    Sprinkle bread crumbs over both sides of zucchini.
  • Adding Italian seasoning to zucchini rounds.

    Season with Italian seasoning, salt & pepper to taste.
  • Zucchini rounds on baking sheet under broiler.

    Broil for 5-7 minutes.
  • Turning zucchini with tongs.

    Then turn zucchini. Broil for another 5-7 minutes. Zucchini should be tender. Serve this hot!
