zucchini chips

In yet another attempt to foster a love for vegetables in my child, I came up with a quick way to make zucchini more kid-friendly. It's a bit like breaded/fried zucchini but without the oil and just enough breading to add some crunch. Next time I plan to add a little grated Parmesan cheese.

These zucchini chips are slightly crisp on the outside and tender in the center. Cooking them under the broiler makes the bread crumbs nice and crispy. Easy to throw together, they're a great snack or side dish and another tasty way to use extra zucchini. So good!

Ingredients For zucchini chips

2 mdzucchinis or yellow squashes

1egg
-
1/2 cbread crumbs, dry

1 tspItalian seasoning

salt & pepper, to taste

Test Kitchen Tips
To make the slices even we (carefully) used a mandolin.

1Preheat oven broiler.

2Wash and slice zucchini into 1/4" rounds.

3Place onto greased baking sheet.

4Lightly beat egg in a small bowl and use a basting brush to coat both sides of the slices with egg wash.

5Sprinkle bread crumbs over both sides of zucchini.

6Season with Italian seasoning, salt & pepper to taste.

7Broil for 5-7 minutes.

8Then turn zucchini. Broil for another 5-7 minutes. Zucchini should be tender. Serve this hot!
